It looks like a traditional cupcake or biscuit, but at the same time the dough for muffins on kefir is much easier to prepare and not so moody. The porous structure characteristic of such baking is explained by the interaction of kefir containing acid, and soda or baking powder.

Products prepared according to the recipes of muffins on kefir in tins are cooked and baked quite quickly, they are suitable to quickly “build” something for guests suddenly arriving.

General principles for the preparation of muffins on kefir

There are many recipes for muffins in kefir in molds. Most often they are, of course, prepared with sugar. However, you can bake and not sweet, but salty or spicy products. They are suitable for those who do not eat sweets, and can also be used instead of snacks or a delicious breakfast.

As additives, you can use almost anything: raisins, candied fruits, fruits, berries, chocolate, jam, condensed milk. And in unsweetened cupcakes on kefir, you can add cheese, herbs, sausage or bacon, spinach, boiled chicken and much more. Funny sweets are obtained by mixing tiny cauliflower inflorescences into the dough. In general, to supplement with some additives the recipe for kefir muffins in molds is always possible. Just make sure that there are not too many additions: the dough can rise poorly.

For baking cupcakes on kefir, it is best to use silicone molds. They can not even be greased: baking is still easy to extract from them. If there are no silicone molds, you can use metal ones, but then it is better to invest paper in them. This is also a good option. Serving such pastries can be done directly in a paper mold, which allows you to take these cupcakes with you on a picnic or on a trip if you are not sure that you can wash your hands before eating: these cupcakes can be eaten without touching them.

Ready-made sweet muffins on kefir can be sprinkled with powdered sugar or coated with lipstick or glaze. Unsweetened muffins can be sprinkled with grated cheese and put in the oven for a couple of minutes.

Recipe 1. Muffins on kefir "Chocolate"

Ingredients

Flour - one and a half glasses

Eggs - 3 pieces

Kefir - one and a half glasses

Sugar - half a cup

Cocoa - 5 large spoons

Vegetable oil (any) - 3 tablespoons

Dried cherry (candied fruit) - half a glass

Vanilla Sugar - 1 sachet

Soda - half a teaspoon

Cooking method

Beat eggs with sugar in a bowl (it is better to make it with a mixer, you can manually). Add soda, oil, vanilla sugar to the mixture and beat a little more. Now add kefir, mix.

Sift flour, cocoa as well. Mix them together and gradually pour into the liquid mixture, stirring all the time. If this is not done, lumps may form, which will then cause inconvenience.

Knead a fairly liquid dough from all the ingredients, mix the cherries into it (you can also add nuts or replace the cherries with other candied fruits or raisins).

Put a tablespoon of dough in the molds so that they are filled only until the middle.

Bake in the oven at 180 degrees for approximately 25 minutes.

Recipe 2. Muffins with kefir with raisins and rum

This recipe for kefir muffins in molds involves the use of strong alcohol, but this does not mean that they can not be given to children. In the process of baking, the alcohol will evaporate, only a pleasant smell remains. In extreme cases, if there is no rum, it can be replaced with a balsam (such as Riga) or cognac, but not vodka.

Ingredients

Eggs - 4 whole + 2 yolks

Kefir - half a cup

Cream 30% - half a glass

Flour - 2 cups

Raisins - half a glass

Butter - 250 g

Sugar - 2 cups (maybe a little less)

Vegetable oil - 4 tablespoons

Starch - Spoon

Rum (dark) - 2 tablespoons

Baking powder - 1 teaspoon

Cooking method

Put the oil in a warm place when it becomes completely soft, put it in a bowl and beat with a mixer. Add sugar and vanilla sugar to it and beat well again.

Lay eggs and yolks - one at a time, thoroughly whipping after each. Drive in rum and vegetable oil as well.

In another bowl, mix flour with starch and baking powder and raisins.

Add half the dry mixture to the liquid mixture, add half the kefir (it should not be cold, even better lukewarm), beat everything. Then add the remaining dry mixture and the remaining kefir and beat well again.

Separately, whip the cream until the "scallops". Gently put them in the dough and mix them very carefully with a spoon with movements from bottom to top.

Spoon the dough into molds to half, bake at 180 degrees for about 35-40 minutes.

Ready rum muffins can be sprinkled with powdered sugar.

Recipe 3. Kefir muffins in Triple Chocolate molds

Ingredients

Flour - a glass

Egg - 1

Butter - 50 g + 50 g

Sugar - half a cup

Powdered Sugar - 100 g

Cocoa - 3 tablespoons "with a slide"

Low-fat kefir - 150 ml

Soda - a pinch

Bitter Chocolate - 100 g

Cooking method

Beat butter (50 g) with sugar until foam, add the egg there and continue whipping.

Pour a spoonful of cocoa and soda into the mixture, continue whipping, add kefir and gradually add flour, without ceasing to beat the dough. When it is ready, prepare the molds, lubricate them with some oil if necessary.

Break the chocolate into pieces. Put a spoonful of dough in each tin, then a piece of chocolate, then again on a spoonful of dough (or how long it takes for the tins to be filled to the middle. Put the cupcakes at a temperature of 180 degrees for about 30 minutes.

In the meantime, beat the remaining butter with the remaining cocoa and powdered sugar.

When the baking is ready, leave it to cool. Then decorate with chocolate icing. If this seems not enough for you, you can still add a little whipped cream.

Recipe 4. Muffins on kefir in molds with poppy seeds.

Ingredients

Poppy - half a glass

Honey - a couple of spoons

Eggs - 2 pieces

Sugar - a glass

Oil - pack

Kefir - one and a half glasses

Mayonnaise - 100 g

Soda, vanilla sugar - 1 teaspoon each

Sour cream - 100 g

Flour - approximately 2 cups

Cooking method

Mix and even whisk a little whisk the eggs with sugar and very softened butter. Add kefir, sour cream and mayonnaise, as well as soda and vanilla sugar, and beat everything very carefully again.

To add a little flour, since it is impossible to accurately predict how much will be needed. The dough should turn out as a very thick sour cream.

Pour poppy seeds with a small amount of boiling water with honey mixed in it. Leave on for ten minutes, grind thoroughly. Stir in the dough.

Ingredients

Hard and sweet apples (e.g. Granny) - 3 pieces

Kefir - a glass

Hercules - 2 glasses

Any chopped and lightly toasted nuts - half a cup

Flour - a glass

Sugar - half a cup

Baking powder - teaspoon

Vegetable oil - 2 large spoons

Cinnamon, Vanilla Sugar

Cooking method

Mix dry ingredients separately and liquid ones separately. Grate the apple on the largest grater and mix in the liquid mixture. Leave the nuts in a glass for a while.

Add a little herculent-flour mixture, whisking all the time. When the dough is smooth, add the nuts and mix again.

Turn on the oven. While it heats up to 200 degrees, the dough will infuse.

Put the dough in molds, greased or covered with paper liners. Place in the oven and oven for 25-30 minutes.

Ready cupcakes can be greased with honey.

Recipe 6. Muffins on kefir "Greens"

This is an absolutely incredible recipe for kefir muffins in green molds. Naturally savory.

Ingredients

Kefir - 3/4 cup

Vegetable oil - ¾ cup

Cheese - 150 g

Greens (parsley, spinach, dill, better in the set) - a good bunch

Salt - a pinch

Sugar, baking powder - 1 spoon each

Semolina - half a cup

Flour - half a cup

Cooking method

Rinse greens, first immersed in a bowl of water, and then under the tap. Tear into pieces, put in a blender bowl, pour kefir and puree. Pass the resulting mashed potatoes through a sieve, throw out the cake.

Put semolina in the obtained green kefir and let stand for 30 minutes. Meanwhile, cut the cheese into very small cubes. Roll the cubes in half the flour, and add the rest into the dough. Pour oil and pour salt, sugar and baking powder there. Knead well. If you like spicy, you can add a little red pepper.

Arrange the dough in tins and bake in the oven, preheated to 185 degrees. It will not take much time - 15-20 minutes, so you need to monitor the baking so that it does not burn.

Recipe 7. Kefir muffins in tins with cheese and smoked meats.

Ingredients

Kefir - 1 cup

Eggs - 3 pieces

Any vegetable oil - half a cup

Flour - a glass

Cheese, preferably hard - 100 - 150 g

Smoked sausage (ham, brisket, neck, etc.) - 100 g

Sugar, baking powder - a small spoon

A mixture of Italian dried herbs

Sunflower seeds (can sesame) - half a glass

Cooking method

Beat eggs, add, continuing to beat, sugar, kefir and baking powder. Then add butter and flour. When the dough becomes lush and uniform, grate the cheese as finely as possible and introduce into the dough. Cut the sausage or other smoked meats into thin strips and also mix, then pour the seeds there (naturally, peeled) and a couple of pinches of dried herbs.

Mix the whole mixture very carefully and put half in the molds.

Bake at 190 degrees for about a quarter of an hour.

Recipe 8. Kefir muffin with cheese for microwave

Please note: the dish is cooked in the microwave, so metal molds (except aluminum) will not work!

Ingredients

Flour - half a cup

Butter - half pack

Eggs - 3 pieces

Kefir - a glass

Brynza (preferably solid) - 100 - 150 g

Soda - half a teaspoon

Cooking method

Grate cheese. If it is rubbed poorly, you can slightly freeze it in the freezer.

Soften butter and beat with eggs. Add kefir, beat again. Stir in the feta cheese and gradually add the flour, all the time without ceasing to beat the dough. Pour soda, mix and arrange in tins no higher than the middle.

Allow to stand for 10 minutes.

Cook at the highest power for about three minutes, and then still not get out of the microwave for the same amount of time.

Tricks and tips for making muffins on kefir

  • Be sure to sift the flour: this must be done if you want the pastries to be lush and tasty.
  • Before you put the raisins in baking, lightly sprinkle with flour.
  • Take cheese for baking hard or semi-solid: soft cheese is reluctantly rubbed and then poorly distributed according to the dough.
  • It is better to prepare cupcakes in a cooling oven, that is, you need to put in an already fully heated stove.
