Cancer in the plate?

Crispy potato slices in our plate are a real risk of cancer. To protect themselves as much as possible, scientists are strongly advised to categorically forget over-fried potatoes.

Experts say that frying at high temperatures, which provides the potato with an appetizing appearance and a wonderful taste, leads to the formation of a special substance - acrylamide. In high concentration, it is a carcinogen dangerous to health and life, which causes the growth of a pathological tumor.

Tested on rats

Acrylamide is also found in other foods, such as chips. In addition, it is released along with cigarette smoke. Experiments with tobacco conducted on laboratory animals showed a direct relationship between tobacco smoke and death of experimental subjects from cancer. A highly toxic carcinogen, acrylamide provokes pathological changes in DNA in animals and, as a result, the formation of cancerous tumors.

Meanwhile, scientists have not yet been able to prove the same effect of acrylamide on humans. They only suggest that the conclusions made with respect to animals can be true of humans as well. It is assumed that the effect of acrylamide on the human body depends on its amount. Moreover, some scientists do not see a real danger to human health in the discovered carcinogen.

According to David Spiegelholter, a professor at the University of Cambridge, an adult must 160 times exceed the dose of acrylamide compared to the one fixed today, so that the carcinogen reaches a dangerous concentration.

No place in the fridge

FSA researchers have not only talked about how to fry potatoes. They found that keeping starchy foods in the refrigerator increases their acrylamide content. So you can’t store raw potatoes there, it is better to put it in a dark, dry place with a temperature above 6 ° C.

Among the recommendations proposed by experts in healthy eating, advice is to eat more raw vegetables and fruits, use boiling and steaming, and generally stick to a healthy diet.

We agree with experts: health is more expensive than any delicious crust. Moreover, there is no need to refuse a dish popular in Russia. Knowing how to fry potatoes, you can occasionally spoil yourself with a portion of delicious, albeit not too healthy, food.
